The “poor” dishes which were once found every day on the farmers’ tables are still being prepared in Südtirol. The typical fare of Krapfen, Kaiserschmarrn, Schlutzkrapfen, Speckknödel and Schwarzplentene Torte is very popular to this day and is served not only at dairy huts and refuges in Racines, Ridanna and Giovo, but also in restaurants and other snack points for the traditional "Törggelen" (chestnut festival). Of course, a real South Tyrol snack must include Speck, gray cheese and Schüttelbrot (local dry bread). Happy eating!
